HOUR ONE

Daenna Van Mulligen returns from a 2 week trip to the wine regions of Chile and has she got some recommendations for you and your gift list. The Wine Diva also reviews three big new BC releases.

Mangi a Bevi the West Vancouver restaurant that again raises funds for cancer research. “BACIO- because a cure is obtainable” raised $15,000 last year. In memory of an old dear friend Daph Grisdale and in honour of Chef Rob Parrot’s daughter Julia Parrott, they offer a 3 course menu for $40.00 and a portion of the money goes to two local hospitals. I know a lot of you can’t attend because of where you live, but it’s such a great idea I wanted to lend my support because we have all lost friends and family to cancer. Oh, there’s a great recipe included in the interview from Chef Rob Parrott , his Pasta Carbonara.

Last week brought a Maritimes Ice Wine event. Imagine pairing food with that liquid gold. We bring together Chef Craig Flynn from Chives Bistro in Halifax, Canada, and Jean Benoit Delorier of Benjamin Bridge Wines.
Chef Craig also launched a new cookbook called Fresh and Local.
By the way, I happen to think that the next great breakout wine story will come when Ben Bridge releases their “bubbly.” It will be world class and will really get people thinking about the Maritime wine industry.

Next segment — two words!! Cheech and Chong.
Two good friends bring it all back home. Cheech and Chong were conceived in Vancouver, while Tom and Rich were doing stand-up between strippers at the Shanghai Junk. And the rest is history. The guys have reunited, and are on tour, Tom isn’t drinking but Cheech is all over big world class reds. Funny stuff here!

HOUR TWO

Two interviews from a trip to Whistler.

Bearfoot Bistro is considered by many to be one of the Top 10 restaurants in Canada. Two reasons, Chef Melissa Craig was the surprise winner of the Gold Medal Plates Cooking Competition in 08 which pits the best chefs from across Canada into a regional and then a final competition to select the Best Chef in Canada. Melissa’s story is great, and so is she.

The other half of this duo is The Bearfoot Boss Andre Saint Jacques, and we find him where he is happiest, sitting in his 15,000 bottle cellar with another 5000 in reserve. So, for two segments, we talk food and wine with the best of the best.

Two guests in the last segment of the show: Burton Cummings, the singer/songwriter from The Guess Who. He’s promoting his new CD, Above the Ground. Yes we talk food and wine, but also Obama and road food.

And Jim Tobler from Wine Access is launching a new west coast magazine, Monte Cristo. It’s a great read and is all over the food and wine industry in Canada.

Spaghetti Carbonara

  • 120 gr Spaghetti
  • 1 Tsp Olive Oil
  • 2 oz Pancetta — Chopped
  • 1 Egg Yolk
  • 4 oz Whipping Cream
  • 1 Pinch Chopped Parsley
  • 1 Tsp Butter
  • 1/4 cup Grated Parmesan
  • Salt & Pepper to taste

Cook spaghetti. Mix egg yolk, cream and salt & pepper in bowl. Fry pancetta in olive oil until crisp. Add chopped parsley, butter and spaghetti and toss. Remove from heat. Pour egg and cream mix over spaghetti and toss until thick.
